Link to a great chili

I ate well today, but I am craving some junk food. I started the day off with Raisin Bran Crunch.  Had a mozzarella stick for a snack, a protein shake for lunch and another mozzarella stick for mid day snack.  Then I had spaghetti for dinner with fresh homemade sauce.

Opps

So I didnt do too good yesterday.  I had to finish off the rest of the sour cream and onion dip, right?  It isn't right to just let food go bad and waste it.  Plus there were those Pepperidge Farms cookies that were going to go stale.  But I did eat a healthy for most of the day.  I did NOT make it to the grocery store.  I guess that is my goal today.

Weekends are Hard

I didn't feel like getting out of bed when I woke up at 8 (which is late for me).  So breakfast didn't happen until 10:30.  I had oatmeal with raisins.  I tell you, regular oatmeal: not that tasty.  I will have to check out the other kinds and see if any are actually considered "healthy".  Or I will have to get off my lazy butt and make that yummy sounding Baked Apple Cinnamon Oatmeal from http://www.twopeasandtheirpod.com/

I heard the Girl Scouts are out in full force.  That is going to be hard to resist.

Baked Apple Cinnamon Oatmeal

Ingredients:
2 cups old fashioned oats
1/4 cup light brown sugar
1 1/2 teaspoon cinnamon
1 teaspoon salt
1 teaspoon baking powder
1 1/2 cups skim milk
1/2 cup applesauce
1 tablespoon melted butter
2 egg whites
1 teaspoon vanilla
1 granny smith apple, peeled, cored, and diced

Optional toppings:
Brown Sugar, Raisins, Dried Cranberries, Chopped Almonds

Directions:
1. Preheat oven to 350 degrees.  Coat an 8"x8" baking dish with cooking spray and set aside
2. In a large bowl, combine oats, brown sugar, cinnamon, baking powder, and salt
3. In a medium bowl, whisk together milk, applesauce, butter, egg whites and vanilla. Pour wet ingredients over dry ingredients and stir until combined.  Gently stir in diced apples. Pour oatmeal mixture into prepared pan.
4.  Bake for 20 minutes or until oatmeal is golden brown and set.  Remove from oven and serve warm.  Add additional toppings to baked oatmeal if desired.

My First Day Eating Healthy

You know what?  Eating is hard.  I had 5 meals today and it was difficult to eat that much.  Granted they were small meals but for someone who only ate one time a day, it was a lot. I started off with my Chick-Fil-A Chicken Breakfast Burrito (nutritionist approved - but only once or twice a week because of the sodium).  I had a snack of one of those Special K bars and a co-worker gave me a 100 calorie pack of Pepperidge Farm cookies (can't turn that down!).  Lunch was a delicious protein shake.  I got it at GNC and I believe it's the GNC brand.  It was called simply Lean Shake and I had a strawberry flavored one.  I really wasn't looking for a "lean" protein shake, but there was a guy in GNC taking up all of the store attendants attention and I am impatient.  The guy was looking for a weight loss protein shake, so I got what they were talking about.  Second snack was a mozzarella cheese stick and some applesauce, which was sweetened with cinnamon and I am sure sugar.  Finally for dinner I had an Mother's specialty meal, mixed vegetables, tomatoes, rice and hamburger meat.

So was I successfully healthy?  Nope.  But it is a start.  I ate a normal amount of food.  I ate some good foods.  I did have too much sugar, but I was trying to make due with what was in the house already.  My parents are not healthy eaters and we have my 5 year old niece living here so its not like the place is stacked with the healthiest snacks.  I am lucky the Special K bars were here.  I was hoping for a banana because I know Vada (my niece) likes them.  Hamburger meat probably isn't that healthy, but I had her add half of what she normally does.  I would have done better with fresh vegetables instead of canned and brown rice,

Tomorrow I head for the grocery store so I will be able to pick up more good for you stuff.  I also bought two healthy eating cookbooks, My Father's Daughter by Gwyneth Paltrow and the one by Sheryl Crow (I can't remember the name).  I was hoping to get them on the Kindle, but its probably better to have them in hardbook. If I can actually figure out the healthy stuff to eat maybe I can save $100 a week by not having the meal service my nutritionist provides, but I think I will give her a try for a while to find out what is healthy.

Help me out!

I would love it if people were to send me recipes or even just suggested healthy food and snacks to me.  I was told that my old standby of potato chips and sour cream and onion dip didn't cut it anymore.

My date with a nutritionist

First a little background information.

I have never been a healthy eater.  I have subsisted on about 700-900 calories a day for as long as I can remember and had a severe bout with anorexia that is under control now.

I joined my good friend's gym and had him recommend a trainer for me and he played a dirty trick on me.  He set me up with a trainer who was also a nutritionist.  I know he did this because he loves me and wants the best for me.

It was an eye opening experience.  I am 33 years old and if I don't get my act together soon, things are going to go downhill fast.  During my bout with anorexia my kidneys started to shut down.  I know the effect that nutrition can have on your organs and other health related problems.  I was shocked to learn that you can also get diabetes too from poor nutrition.

We talked about healthy food options but food to me is so overwhelming.  On my own, I can not think of food to make.  I try to write grocery lists but come up with 3 or 4 items.  It has always been easier to eat dinner at my parents and just skip the rest of the meals.  But now I was expected to change my poor habits and eat 5 meals a day.  I have never eaten 5 meals a day.  I eat one.

So tomorrow starts a new way of living for me.  For breakfast I have been given permission to eat my favorite, a chick fil a breakfast burrito.  For my mid morning snack (so weird to think of), I will have applesauce and a mozzarella cheese stick.  Lunch will be a strawberry protein shake from GNC and mid day snack will be a strawberry Special K bar.  It doesnt sound exciting, but its what I found in the house. 

Here is my first grocery list:
Granola
Applesauce
Plain oatmeal
Plain Greek yogurt
low fat cheese sticks
packages of apple slices (how do you keep apple slices from going brown?)
Bananas
Almonds

My trainer/nutritionist also provides a meal service which I will use for a while that will make 4 of the 5 meals for me.  I will pick it up every morning at 7 at the gym.  Hopefully after a month or so I will know enough to make my own food.

I also learned that I probably gained the ten pounds I joined the gym for was probably due to stress.  It is all in my midsection and I started gaining right when things got very stressful at work.  So tomorrow I will start my day at a 6am yoga class.
